Pineapple Slush

Great after running around in the hot weather.

Ingredients
  • One 20-oz. can crushed pineapple in juice
  • Approximately 3 cups water
  • 1-1/2 cups sugar

Instructions
  1. Drain the pineapple juice into a large measuring cup and add enough water to make 3 cups.

  2. In a large saucepan, bring the pineapple juice mixture and the sugar to a boil, stirring occasionally. Reduce the heat and simmer for 5 minutes.

  3. Cool the mixture until it reaches room temperature, then stir in the crushed pineapple.

  4. Pour the mixture into a 13 x 9 inch baking pan and freeze until firm.

  5. Before serving, let the mixture stand at room temperature for 15 to 30 minutes.

  6. Transfer chunks of the frozen concoction into a food processor or blender and process it in batches until it is smooth but small pieces of the pineapple remain. Spoon the mixture into cups and serve immediately. Makes 6 servings.
