Chunky Apple Molasses Muffins
A deliciously sweet way to start the day.
- Ingredients

- 2 cups flour
- 1/4 cup sugar
- 1 tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 large firm apple, peeled, cored and diced
- 1/2 cup milk
- 1/4 cup molasses
- 1/4 cup vegetable oil
- 1 egg

Lightly grease 8 muffin pan cups. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Add diced apple and stir to distribute evenly. Preheat oven to 450 degrees.

In another bowl, beat together milk, molasses, oil and egg. Stir this mixture into the dry ingredients until just blended. Do not overmix.

Fill muffin pan cups with batter and bake for 5 minutes at 450 degrees.

Reduce heat to 350 degrees and bake for 12 to 15 minutes longer or until centers of muffins spring back when gently pressed. Cool in pan for 5 minutes before removing. Makes 8 muffins.
