Apple Walnut Pancakes

These fancy pancakes are a tasty alternative to our standard fare.

Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 cup wheat germ
  • 1 large egg, beaten
  • 1 cup buttermilk
  • 1/4 cup walnuts
  • 1/2 apple, grated
  • Vegetable oil for the griddle

Instructions
  1. In a blender or processor, combine the flour, baking powder, baking soda, salt, sugar, wheat germ, egg, and buttermilk for fifteen seconds. Add the walnuts and blend or process until they are finely chopped. Stir in the grated apple. Prepare the pancakes on a warmed, lightly greased griddle. This recipe makes about eight medium-size pancakes.
