Super Salad Pitas
One of the tastiest ways to give your children their favorite vegetables is in a pocket bread. For this, your kids can help out. When you return from the market with an assortment of lettuces and vegetables, have the kids wash all the dark-leaf lettuce before putting it away.
- Ingredients

- 1 cup sunflower or peanut oil
- 1 clove garlic, crushed
- 1/2 cup fresh parsley, chopped
- 2 teaspoons dried dill weed
- 1 teaspoon dried chives or 1 tablespoon fresh, chopped
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/3 cup cider vinegar

Mix 1/4 cup of the oil in a blender or food processor with all of the ingredients except the vinegar. Add the vinegar and another 1/4 cup of the oil and process for a few seconds. With the blender or processor running, slowly pour in the remaining oil until it is incorporated completely and the dressing is creamy. Store in a covered jar in the refrigerator.
