FamilyFun's guide to a nutritious diet

The flavorful combination of sweet corn and ripe tomatoes makes this simple, healthful seafood dish more enticing to young taste buds. We used halibut, but you can substitute cod or salmon and either broil or grill.

Ingredients
  • FOR THE RAINBOW SIZZLE:
  • 1 tbsp. olive oil
  • 1 tsp. finely chopped shallots
  • 1/2 cup chopped fresh tomatoes or canned tomatoes, drained
  • 1 1/2 cups fresh corn, kernels removed from the cob
  • 1 tsp. jalapeño pepper, seeded and finely chopped (optional)
  • Pinch of cumin
  • 1/2 tsp. sugar
  • 2 tbsp. balsamic vinegar
  • Salt and pepper (to taste)
  • FOR THE FISH:
  • 6 halibut fillets, 4 to 5 ounces each
  • 1 tbsp. canola oil
  • Salt and black pepper (to taste)

Instructions
  1. Heat the oil in a skillet over medium heat. Cook the shallots for 2 to 3 minutes until soft but not dark. Add the tomatoes, corn, and (if your kids like a spicier flavor) jalapeño pepper and cook for 1 minute. Add the cumin and sugar and cook 1 more minute. Add the vinegar and cook until the liquid reduces slightly. Add salt and pepper to taste.

  2. Heat the broiler (or grill). Brush the fillets with oil and season generously with salt and pepper. Broil or grill them for 3 to 4 minutes on each side, turning once. (Thin fillets take less time, thicker fillets take more.) Divide the Rainbow Sizzle among 6 warm plates. Lay the fillets on top. Serve immediately. Serves 6
