Italian Pine Nut

Ingredients
  • 1/2 lb. almond paste
  • 2 egg whites
  • 1/2 cup confectioners' sugar
  • 1/2 cup sugar
  • 1/4 cup flour
  • 8 oz. pine nuts (pignoli)

Instructions
  1. Preheat oven to 300 degrees.

  2. In a mixing bowl, beat almond paste and egg whites together with a mixer. Fold sugars and flour into egg mixture with a wooden spoon. Careful, mixture is very sticky.

  3. Place a handful of the pine nuts in a bowl. Make teaspoon-sized balls with the mixture, individually flatten them onto pine nuts and place them on a greased cookie sheet.

  4. Bake for about 20 minutes or until edges turn golden brown.
