Smashing the spuds is a great way to harness your child's holiday excitement. This recipe makes lots and lots, but no one in my house ever complains about the leftovers. It's easy to make the whole 5-pound bag at once, especially since you don't have to peel a single potato (these mashed potatoes keep their skins).

- 1 5-lb. bag Idaho potatoes
- 1/2 cup unsalted butter
- 1 1/2 cups warm milk
- Salt and pepper to taste

Scrub the potatoes and cut them into 1-inch chunks. Place in a large saucepan with enough water to cover them. Bring to a boil, reduce heat and simmer for 20 to 25 minutes, or until tender when poked with a fork; drain.

Return the spuds to the pot and mash with a potato masher. Add butter and milk; mix well. Season with salt and pepper. Yields 10 to 12 servings.
