Breakfast on the Go

Get a nutritious breakfast on the run

by Bea Lewis
Spread a whole-wheat bagel with peanut butter and apple butter.

Serve raisin-studded pumpkin muffins (see Muffins On the Move) with containers of low-fat yogurt.

Spread cream cheese on a wheat tortilla; roll it up for easy eating, along with a crisp apple.

Grill cheese and tomato in a split pita for an inside-out pizza that's as good cold as it is hot.

Fill a pita pocket with leftover meat or chicken; the child can hold the pita in one hand and a juice box of O.J. in the other.

Pack mini-frozen waffles in one sealable plastic bag, and place sweet strawberries in another.

Leftover pizza makes a splendid breakfast, with the cheese and bread making a complete protein and the tomato counting as a fruit.

Hand the child a cereal box and a tangerine.

Hand him or her a hard-boiled egg with an orange that you've cut into wedge-shaped "smiles."

Matzo, a length of string cheese, and a small can of tomato juice add up to a balanced breakfast on the run.
