Royal Icing
This quick-mix recipe makes enough "glue" to build and decorate our Gingerbread Train. We've found that dried egg whites work best, but you can substitute fresh ones. (Note: eating raw egg whites is not recommended.)
- Ingredients

- 2 tablespoons plus 2 teaspoons dried pasteurized egg whites, prepared according to the package directions (or 4 fresh whites)
- 6 cups sifted confectioners' sugar
- 1/2 teaspoon cream of tartar

Combine all of the ingredients in a large bowl. Beat the mixture on high speed until it's light and fluffy, about 5 to 6 minutes. Cover the bowl with plastic wrap until you're ready to use the icing. Makes 3 cups.
Homemade Icing Bags
These easy-to-use disposable bags help young engineers put icing right where they want it. To make one, fill a sandwich-size ziplock bag with icing, then snip 1/4 inch from one corner. Holding the bag at the top, squeeze icing through the hole.
