Pastel Moctezuma
FamilyFun.comThis is an exotic name for a simple preparation. Think of it as a Mexican lasagna. As with lasagna, the recipe is very forgiving, and a bit more or less of any ingredient won't make much of a difference. It is, however, a wonderful way to use leftover chicken, stew, roasted peppers or steamed vegetables. Makes 6 servings.

- 1 lb. ground beef
- Salt and pepper
- 12 whole wheat tortillas, 5 inches in diameter
- 2 tomatoes, diced
- 2 cups light sour cream
- 2 cups grated cheddar cheese

In a hot skillet, brown the beef. Drain off the fat, season with salt and pepper, and set the meat aside. Warm the tortillas in the oven. Take them out of the oven and cover with a cloth napkin to keep them warm while you work.

Lightly butter a 9-by-12-inch rectangular baking dish. Place 4 tortillas on the bottom of the dish. Cover with one layer of tomatoes, one of ground beef, one of sour cream and one of cheese. Add a second layer of tortillas and repeat the tomatoes, beef, sour cream and cheese. Add a third layer.

Bake in a 350-degree oven for about an hour, until the cheese on top is golden brown and most of the moisture has been absorbed. Cool slightly before cutting into squares; serve with a green salad.
