Easy Gazpacho

- Ingredients

- 6 large tomatoes, seeded and finely chopped
- 2 cucumbers, peeled, seeded and finely chopped
- 1 red onion, peeled and finely chopped
- 1 red or green pepper, seeded and finely chopped
- 3 garlic cloves, minced
- 2 cans tomato juice
- 1/4 cup olive oil
- 2 tbsp. red wine vinegar
- 1 tbsp. lime juice
- 1 tsp. salt
- 1 cup croutons
- 1/4 cup minced parsley or cilantro

- Instructions

Mix all ingredients except croutons and herbs. Blend if you like smooth gazpacho. Or blend half the mixture and add remaining chopped vegetables. Chill. Before serving, add croutons and herbs.
