Tamale Pie
Casseroles and salads you can share with pride
From the kitchen of: Viviana C., Miami, Florida

1 medium onion, minced
2 garlic cloves, minced
2 tbsp. olive oil
1 lb. ground beef
1/2 cup golden raisins
1 small can tomatoes
1 tbsp. chili powder
1 tsp. salt
1 can or 1 frozen pkg. corn
1/2 cup pitted olives
1 cup cornmeal
1 cup milk
2 eggs, beaten
1 cup grated hard cheese, preferably Monterey Jack

In a skillet, sauté onion and garlic in oil. Add beef and sauté until browned. Add raisins, tomatoes, chili powder, salt, corn and olives; simmer for 15 minutes. Meanwhile, in a bowl, blend cornmeal, milk and eggs. Pour hamburger mixture into an 11-by-17-inch Pyrex dish. Spread cornmeal mixture over hamburger, and sprinkle with cheese. Bake in a 350-degree oven for 30 minutes.

TAKES HOW LONG TO MAKE: Less than 1 hour

COMMENTS: Serve this pie to really spice things up.
