Simple and fun to make, these fish sticks are bound to become one of your family's favorite quick dinners. We used fillet of sole, but grouper and cod also work well.
- Ingredients

- 2 eggs
- 2 tablespoons water
- Salt and pepper, to taste
- 1 1/2 cups seasoned bread crumbs
- 3 tablespoons grated Parmesan cheese
- 2 pounds fillet of sole
- 1/4 cup olive oil
- 1 lemon, cut into wedges
- Tartar sauce (optional)

In a bowl, beat the egg, water, and salt, and pepper to taste. In a separate bowl, mix the bread crumbs and Parmesan cheese.

Rinse the fish and cut it into 4- by 2-inch sticks. Lightly coat the fish with the egg wash, then the bread crumbs.

Heat the olive oil in a large skillet over medium-high heat. Add the fish and cook until golden, about 3 minutes on each side.

Remove the fish from the pan and set on a paper-towel-lined dish. Serve with lemon wedges and tartar sauce. Makes 6 servings.
