Hash Brown Potatoes with Sausages

- Ingredients

- 1 tbsp. vegetable oil
- 4 cups frozen hash brown potatoes
- 1 lb. turkey breakfast sausage, casings removed
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 tbsp. dried parsley
- 1 tsp. minced garlic
- 1 tsp. dried herbes de Provence
- 1/2 tsp. dried red pepper
- 2 tomatoes, quartered
- 1/2 cup shredded cheddar cheese

Heat the oil in a large non-stick skillet over medium-high heat. Add the potatoes and spread evenly over bottom of pan. Cover pan and cook 5 minutes. Remove lid and cook, stirring, an additional minute, until the potatoes are lightly browned. Remove potatoes from pan.

In the same skillet over medium-high heat, cook the sausage, onion, peppers, parsley, garlic, herbes de Provence and red pepper flakes for 5 to 7 minutes, until the sausage is no longer pink and the vegetables are tender. Stir the potatoes into the mixture and arrange tomato wedges over the top. Top with cheese, cover and cook 4 to 5 minutes, until the cheese is melted. Makes 6 to 8 servings.
