- 3/4 cup sugar
- 2 tbsp. margarine
- 2 eggs
- 2 1/2 tsp. pumpkin pie spice mix
- 1/2 cup Bisquick baking mix
- 1 13-oz. can evaporated milk
- 1 16-oz. can pumpkin
- 2 tsp. vanilla

Heat oven to 350 degrees.

Grease pie plate.

Beat all ingredients until smooth (1 minute in blender or 2 minutes with hand mixer).

Pour mixture into pie plate.

Bake until inserted knife comes out clean, about 50 to 55 minutes.
