Independence Day Salsa & Chips
This salsa, which relies on the full, slightly sweet flavor of ripe summer tomatoes, is so simple to prepare, you may never buy the jarred version again.
- Ingredients

- 1 pound ripe plum tomatoes, coarsely chopped
- 1 jalapeño chili pepper, seeded and minced (optional)
- 2 garlic cloves, minced
- 3 tablespoons coarsely chopped cilantro
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- White and blue tortilla chips

In a medium bowl, combine the tomatoes, jalapeño (if desired; remember to wash the hot oil off your hands after chopping), and garlic.

Stir in the cilantro, lime juice, olive oil, and salt.

Transfer the salsa to a serving bowl. Serve with plenty of tortilla chips. Serves about 8.
