- juice from 1 lemon
- 1/4 cup each of diced red and green bell pepper

Peel and dice 1 ripe mango.

In a mixing bowl, combine the mango, 2 tablespoons of minced cilantro leaves, 1 teaspoon of olive oil, the juice from 1 lemon, and 1/4 cup each of diced red and green bell pepper. Makes 1 cup.
