Turkey can be dry when it's overcooked, but the couscous in this recipe keeps this burger remarkably moist. The mini size is cute (and sometimes less sloppy), but if the adults prefer grown-up-size burgers, this recipe makes four, each served in a half pita.

- 1/3 cup water
- 1/4 cup dry couscous
- 12 oz. ground turkey
- 1 tbsp. grainy mustard
- 1 tbsp. ketchup
- 1 tbsp. Worcestershire sauce
- 1 small garlic clove, minced
- 1/4 tsp. pepper
- 1 cup grated Cheddar or your favorite cheese
- 4 6-inch pitas, each cut into quarters
- Ketchup, mustard, and pickles to taste (optional)
- 5 lettuce leaves, washed and dried and torn into little pieces (optional)

Bring the water to a boil in a small pan. Pour it into a medium-size bowl, add the couscous, and cover.

Let it sit until most of the water is absorbed and the couscous has cooled, about 10 to 15 minutes. Add the turkey, mustard, ketchup, Worcestershire sauce, garlic, and pepper, and mix well.

Divide the mixture equally into 16 balls, each about 1 1/2 inches.

Flatten each into 1-inch-thick mini patties. Grill the mini patties on a vegetable rack (so there's no danger of them falling into the coals) placed on an uncovered grill directly over medium coals for 6 to 8 minutes or until the meat is just cooked through, turning once halfway through cooking.

Sprinkle each burger with about 1 tablespoon of cheese and cover the grill, just until cheese is melted, about l minute.

Remove the burgers to a platter and stuff each into a pita triangle (kids can do this). Set out ketchup, mustard, pickles, and lettuce, and let guests season their own. Makes 16 baby burgers and serves 6 to 8.
