Popeye's Super Snack
If there was ever an easy way to get kids to eat their spinach, these chewy, cheesy treats are it.
- Ingredients

- 2 10-ounce packages frozen chopped spinach, thawed and squeezed dry
- 2 cups herb stuffing mix, crushed to make fine crumbs
- 1 cup freshly grated Parmesan cheese
- 1 stick butter or margarine, melted
- 4 scallions, finely chopped
- 3 eggs, lightly beaten
- Dash of ground nutmeg

Preheat the oven to 350 degrees. Combine all the ingredients and mix well. Shape into 1-inch balls (you and your kids may find this easier if you dampen your hands with water). Bake the spinach balls on ungreased cookie sheets for 20 to 30 minutes. (The balls may be frozen after they are shaped and cooked just before serving.) Serves ten to 12.
