As a busy mom of two busy girls, I've learned that sometimes the best way to get dinner on the table is to have the kids help out. So I often give Ella, 9, and Maisie, 5, the role of kitchen helpers: washing lettuce in the salad spinner or cutting tomatoes with a plastic knife. Not only does it save time, but as we cook the girls tell me stories about their day, like who they played with at recess and why they absolutely, positively have to get their ears pierced.
That interaction is the inspiration for FamilyFun's latest book, "Cooking with Kids," which features 300 recipes for families to make together. As one of its editors, I was fortunate to have tasted most of them, including these five, which have become staples in my kitchen. They're all a snap to make, can be adapted for picky eaters, and offer great opportunities for kids to pitch in.
5 Favorites from FamilyFun: Cooking with Kids
Each of the following is quick to prepare and destined to become part of your family's repertoire:
The best part of this tasty, broth-based Tortilla Soup? Everyone at the table can customize their serving with the add-ins of their choice.
This simple, fast Chicken Curry is made rich and creamy by adding canned unsweetened coconut milk (available in the international section of most large supermarkets).
Simple and fun to make, these Fast Fish Fingers have become one of my family's favorite quick meals. We use sole, but scrod or other small white fish also work well.
This Steak Stir-Fry comes together quickly, especially if you mix the sauce in the morning and let the meat marinate in the fridge all day. Use chopsticks -- the kids think it's fun, and it slows the pace of the meal!
Here's a simple recipe for Kids' First Mac and Cheese that goes together layer by layer, making it fun for kids as young as 5 to prepare. Extra tasty, too, thanks to the cracker topping.
