Moo Shu Pork
For authentic Moo Shu, you need 'tree ears,' Chinese black mushrooms, bean thread noodles, and Mandarin pancakes. This recipe substitutes ingredients that are easier to find, without sacrificing taste.

- PREP
- 3/4 pound pork tenderloin, trimmed and cut into strips 1/4 inch thick
- MARINADE
- 2 teaspoons soy sauce
- 1 teaspoon dry sherry
- 1 teaspoon cornstarch
- 1/4 teaspoon sugar
- PANCAKES
- 6 Mandarin pancakes (available at Chinese grocery stores) or 6 large flour tortillas
- SAUCE
- 2 tablespoons hoisin sauce
- 2 teaspoons dry sherry
- 2 teaspoons soy sauce
- 1 1/2 teaspoons sugar

Marinate the pork while you prepare the rest of the ingredients. Wrap the pancakes or tortillas in foil and warm for ten minutes in a 325-degree oven. In a small bowl, mix the sauce. Heat the oil in your pan over high heat, then add the pork strips and stir-fry for three minutes or until the meat is no longer pink. Restir your hoisin mixture and add it to the pan, tossing for a few seconds to evenly coat the pork. Stir in the bean sprouts, then remove the combination to a serving platter and top with the scallions. To serve, spoon the stir-fry into the center of a pancake, fold up one inch at the bottom, then fold over the sides and eat with your hands. Serves three.
