Chinese Cook-in

Stir-fry at home with FamilyFun

Fried rice, a mild Chinese mainstay, is appropriate especially for a child new to this nation's varied cuisines. Serve this with a Chinese vegetable, such as steamed spinach with soy sauce and sesame seeds.

Ingredients
  • 2 tablespoons peanut oil
  • 2 large cloves garlic, minced
  • 1 tablespoon finely chopped fresh, peeled ginger
  • 1 medium rib celery, julienned
  • 1/2 medium green pepper, seeded and diced
  • 10 snow peas, julienned
  • 1/2 cup fresh or frozen peas
  • 3 whole scallions, cut in half and julienned
  • 4 cups cold cooked rice (day-old rice works best)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoons oyster sauce or soy sauce

Instructions
  1. Heat the oil in your skillet or wok over high heat. Add the garlic, ginger, celery, and pepper, and stir for 30 seconds. Add all the peas and scallions and stir for another 30 seconds. Add the rice, breaking up any lumps, and continue to toss all the ingredients in the hot oil for one minute until everything is heated through. Sprinkle with the seasonings and continue stirring for a few seconds to combine. Serves four to six.
