Cucumber Relish

Cucumber relish is a versatile side dish that goes well with Indian, Middle Eastern or Mediterranean dishes. It's also a snap to make.

Ingredients
  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 pound cucumbers, peeled and thinly sliced
  • 1 tablespoon finely chopped red chilies
  • 2 tablespoons finely chopped roasted, unsalted peanuts
  • 2 tablespoons chopped cilantro

Instructions
  1. In a small, nonreactive saucepan, bring the vinegar, sugar, and salt to a boil. Reduce the heat to low and cook for 2 more minutes, stirring to dissolve the sugar and salt.

  2. Remove the pan from the heat and let the dressing cool to room temperature.

  3. Place the cucumbers and chilies in a bowl and mix them with the dressing. Sprinkle the peanuts and cilantro on top just before serving. Makes 2 2/3 cups.
