A Simply Great Salad Dressing

Homemade dressing can make salads appealing to even the most stubborn veggie-phobe. This simple low-fat recipe gets its creamy texture from Dijon mustard and yogurt and whips up in minutes.

Ingredients
  • 1/4 cup balsamic vinegar
  • 1 tablespoon light soy sauce
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 3 tablespoons nonfat Greek yogurt (or regular plain)
  • 1 1/2 tablespoons extra virgin olive oil

Instructions
  1. Simply whisk together balsamic vinegar, soy sauce, Dijon mustard, honey, and yogurt.

  2. Add extra virgin olive oil, and mix well.

  3. Store any leftover dressing in the refrigerator, but let it come to room temperature before serving. Makes 3/4 cup.
