Couscous Pilaf with Peas
A delicious vegetarian main dish.
- Ingredients

- 1 medium onion, diced
- 1 garlic clove, minced
- 1 tbsp. olive oil
- 1 cup frozen peas
- 1 tbsp. minced dill
- Salt and pepper
- 1 1/2 cups vegetable or chicken stock
- 1 cup couscous
- 1 tbsp. butter, cut into bits

Saute the onion and garlic in the oil in a saucepan over medium heat until tender (about 5 minutes). Stir in the peas, dill, salt, pepper and stock, and bring to a boil. Add the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit for 5 minutes, until the liquid is absorbed. Fluff it with a fork, then stir in the butter. This can sit, covered, for about 10 minutes, or it may be served immediately.
