Bread Salad
This panzanella was probably invented as a way to use up stale bread.
- Ingredients

- 3 tbsp. olive oil
- 2 tbsp. vinegar
- Salt and pepper
- 1/2 red onion, diced
- 2 cups cubed Italian bread
- 1 large tomato, seeded and diced
- 1/2 cucumber, peeled, seeded and diced
- 1/4 cup chopped fresh basil

In a small bowl, mix the olive oil, vinegar, salt, pepper and onion. Set aside.

Just before serving, put the bread, tomato, cucumber and basil in a bowl. Add dressing and toss well. Correct seasoning. Makes 4 servings.
