Greek Salad
A delicious refreshing salad that's great as the entree or the appetizer.
- Ingredients

- 1 large head romaine lettuce
- 1/2 red onion
- 1 cucumber
- 2 medium tomatoes
- 12 black olives
- 1/2 cup feta cheese, crumbled
- 3 tbsp. olive oil
- 1 tbsp. red wine vinegar
- 1/2 tsp. dried oregano
- Salt and pepper

Cut the romaine into bite-size pieces. Slice the onion and separate the slices. Peel, seed and slice the cucumber. Cut the tomatoes into wedges. Put all the vegetables into a salad bowl with the olives and feta cheese. In a small bowl, mix together the olive oil, vinegar, oregano, salt and pepper and toss with the salad. Makes 6 servings.
