Baked Rice

- 1 stick butter
- 1 6-oz. jar mushrooms (optional)
- 2 cans French onion soup
- 2 cans broth
- 2 cups fast-cooking rice

Preheat oven to 425 degrees. In a cast iron pot, melt butter. Add mushrooms. Add 2 cans French onion soup and 2 cans broth. Bring to a boil. Add 2 cups of fast-cooking rice and stir. Cover. Place pot in a 425 degree oven and cook for 45 minutes.
