Chinese Fried Rice
This delicious Asian dish is great as a side or an entree.
- Ingredients

- 3 tablespoons peanut oil
- 2 garlic cloves, crushed
- 1 tablespoon peeled and finely chopped gingerroot
- 1 1/2 cups cooked diced mixed vegetables, such as broccoli florets, carrots, red bell pepper, scallions, snow peas, corn kernels, or peas
- 2 cups cooked rice
- 3 eggs, beaten
- Soy sauce (optional)

In a wok or large nonstick skillet, heat the peanut oil with the garlic and ginger.

Once the oil is hot, add the vegetables. Stir over high heat for about 2 minutes.

Crumble the rice into the pan and stir-fry for 3 more minutes. Reduce the heat, pile the rice in the center of the pan, and pour the beaten eggs around the edges of the rice.

Scramble the eggs, then fold them into the rice. Serve plain or add soy sauce to taste. Serves 4.
