Succulent Succotash

Although your kids may pick out all the lima beans in this classic side dish, they will have fun making it--and saying its name (which, thanks to Dad the cartoon buff, is known around my house as "s-s-s-sufferin' succotash").

Ingredients
  • 2 tbsp. unsalted butter
  • 1 cup diced onions
  • 1 1-lb. pkg. fresh baby carrots
  • 1 cup low-sodium chicken broth
  • 1 10-oz. pkg. frozen corn
  • 1 10-oz. pkg. frozen baby lima beans
  • Salt and pepper to taste

Instructions
  1. Melt the butter in a medium-size saucepan. Add the onions and saute until translucent. Add the carrots and broth. Bring to a boil, cover and reduce heat to low. Simmer for 15 to 20 minutes or until tender when poked with a fork. Add the corn and lima beans, and cook until heated through. Season with salt and pepper. Yields 8 to 10 servings.
