Quick-to-make tacos are hard to beat for a weeknight dinner. This easy and flavorful Mexican recipe for beef tacos offers a wholesome alternative to the packaged taco seasoning you find at the store.

- 1 tablespoon vegetable oil
- 3/4 cup minced onion
- 1 garlic clove, minced
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 1/2 pounds lean ground beef
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 flour tortillas

Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion has softened, about 6 minutes. Add the cumin and chili powder and cook, stirring, for another minute.

Add the beef and cook, stirring and breaking up any lumps, until the meat is no longer pink, about 5 to 6 minutes. Add the tomato paste, salt, and pepper. Cook the mixture, stirring, for about 5 more minutes.

Taste, and adjust the seasoning if necessary. Serve in tortillas with toppings of your choice. Makes about 3 1/2 cups.
