You know you've served a moist, fluffy, rich stuffing when you suddenly run out.
Tailor the stuffing recipe you serve to the tastes of your guests. Are they adventurous or more likely to favor the familiar? To suit both types, we've gathered eight terrific stuffing recipes--some unique, some classic, all delicious.
Try my mother Caroline's heavenly sage and butter "dressing" or the Catalan stuffing introduced to me by my Cuban friend Viviana Carballo. For a twist on the familiar, try Kathryn's Mashed Potato Stuffing, provided by Kathryn Crowder, the mother of my food writer friend Suzanne Hamlin.
It's always hard to know how much stuffing to make. As a rough guideline, plan on about 3/4 of a cup of stuffing for each pound of turkey.
If I were you, I wouldn't expect any leftovers, though.
