"I have to use all my wiles to get her to eat vegetables," says Meredith Luce of her six-year-old daughter, Lindsey. Luce, a clinical dietitian at Florida Hospital in Orlando, is proof that even the most nutritionally aware parent can have trouble promoting good eating habits.
One trick Luce uses is to shred vegetables like carrots and zucchini and add them to the tomato sauce she serves over pasta.
"It adds all the vitamins without overwhelming the flavor," she says.
