Vegetables for Picky Eaters

How to cook kid-friendly veggies

by Sebastian Oliver
Summer is vegetable season, when long, sunny days keep us in a bounty of plump yellow squash, crisp sugar-snap peas and bright baby radishes. But for some reason, vegetables get a bad rap, especially with the pickiest of picky eaters--kids.

One problem is that vegetables aren't always presented in the best light. Could it be that boiled broccoli, not broccoli itself, is what leaves your picky eater cold?

To find out, try different ways of preparing vegetables. That picky eater may end up surprising you.

Maybe he or she will flip over grilled, roasted or raw veggies. We've got some great ideas for all three.

After all, "eat your vegetables" should be an invitation, not an order.
