Vegetables for Picky Eaters

How to cook kid-friendly veggies

Embrace summer by buying lots and lots of vegetables and eating them raw. Of course biting into an uncooked potato is a smidge unpleasant, but there are tons of tasty veggies just waiting to be left au natural:

BUNCH CARROTS: Peel them and leave the enormous green tops still on and you'll find your picky eater chomping madly just like a certain cartoon bunny.

PEAS: Shell peas, sugar-snaps, sno-peas all have that sweet, juicy crunch.

VIDALIA ONIONS: The Georgia-grown sweet onion is so mild and tasty it can be eaten--no lie--raw like a pear.

RADISHES: Scrubbed clean and served with a little salt or lemon, some folks love the crisp flavor.

CUCUMBERS: Peel off the tough skin and wrap a paper towel around the bottom and let'em eat it churro-style.

SPINACH: The world's best-known muscle food is especially tasty when tossed raw with bits of bacon and croutons.
