Barbecue sauce adds a real kick to ribs, chicken or beef. Experiment with the varieties on the market--or, better yet, make your own.
- Ingredients

- 1 cup virgin olive oil
- 1/2 cup cider vinegar
- 10 large ripe tomatoes, peeled, seeded, and chopped, or 28
- oz. can of crushed tomatoes
- 4 cloves garlic, minced
- 3 small yellow onions, chopped
- 2 tbsp. dry mustard
- 1 tbsp. salt
- 1 green or red pepper, chopped
- 1 tsp. dried oregano
- 1 tsp. dried coriander
- 1/2 cup tomato puree
- 2 fresh jalapeno peppers, chopped (wear rubber gloves or
- rinse hands immediately after handling)

Heat the oil and vinegar in a heavy saucepan. Add the remaining ingredients and stir well, simmering until thick (about two hours). Cool and refrigerate. This makes a thick sauce; it should be diluted with olive oil when used for basting or marinating meat or poultry. Makes five cups.
