Zippy Barbecue Sauce

Barbecue sauce adds a real kick to ribs, chicken or beef. Experiment with the varieties on the market--or, better yet, make your own.

Ingredients
  • 1 cup virgin olive oil
  • 1/2 cup cider vinegar
  • 10 large ripe tomatoes, peeled, seeded, and chopped, or 28
  • oz. can of crushed tomatoes
  • 4 cloves garlic, minced
  • 3 small yellow onions, chopped
  • 2 tbsp. dry mustard
  • 1 tbsp. salt
  • 1 green or red pepper, chopped
  • 1 tsp. dried oregano
  • 1 tsp. dried coriander
  • 1/2 cup tomato puree
  • 2 fresh jalapeno peppers, chopped (wear rubber gloves or
  • rinse hands immediately after handling)

Instructions
  1. Heat the oil and vinegar in a heavy saucepan. Add the remaining ingredients and stir well, simmering until thick (about two hours). Cool and refrigerate. This makes a thick sauce; it should be diluted with olive oil when used for basting or marinating meat or poultry. Makes five cups.
