Quick Cooked Cabbage

From the kitchen of Charlene Dickerson, Crewe, Virginia

Ingredients
  • 2 slices bacon, cut into 1-inch pieces
  • 1/4 cup chopped onion
  • 1 1/4 lbs. cabbage, sliced
  • 1 tsp. dried parsley flakes
  • 3/4 tsp. salt
  • 1/4 tsp. dried basil
  • 1/4 tsp. each of dried oregano, dried marjoram and black pepper
  • Dash of red pepper

Instructions
  1. Cook bacon in large skillet over medium heat until crisp; remove bacon and reserve drippings in skillet. Crumble bacon and set it aside.

  2. Cook chopped onion in drippings over medium heat for 2 minutes, stirring often.

  3. Add cabbage and next seven ingredients; cook, stirring for 1 minute.

  4. Cover and cook until tender. Transfer to a serving dish and sprinkle bacon on top.
