Chicken Kebobs

One of those dishes that can be put together quickly in the morning, then cooked in no time at all at night.

Ingredients
  • 1/2 cup plain yogurt
  • 2 tbsp.minced cilantro
  • 2 cloves garlic, minced
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 2 tsp. cumin
  • Pepper
  • 4 skinless and boneless chicken cutlets
  • 1 zucchini
  • 1 red bell pepper

Instructions
  1. Mix together the yogurt, cilantro, garlic, lemon juice, olive oil, cumin and pepper. Cut the chicken into 1-1/2 inch chunks and put into a bowl with the marinade. Let sit for at least 30 minutes, or as long as 24 hours.

  2. When you are ready to cook, preheat the broiler or light coals on the grill. Take the chicken chunks out of the marinade and thread them on skewers, alternating with the zucchini and red bell pepper, cut in squares. Broil for 5 minutes; turn, baste with the marinade and broil about 3 minutes more, until the chicken is cooked through. Serve with rice. Makes 4 servings.
